Potato Salad

I love to take a recipe and make it my own. I’ve done that with french toast, beef stew, and chicken-and-dumplings. I’m trying the same with potato salad. My friend Liz makes a great potato salad with cilantro, and I was playing with it today.

First, I cooked four red potatoes in super salty water. While those cooled down, I made my dressing. It was…

1/2 cup mayonaise
1/4 cup dijon mustard
splash of white wine vinegar
half the zest of a lemon
juice of a lemon
salt
pepper

Then I added half a chopped white onion to the dressing as well as a good handful of chopped cilantro.

This was really tasty, albeit a bit wet. The lemon juice was probably a bit too much. It may have been a bit too acidic, so next time I’ll leave it out.
