Shortbread Cookies

This weekend, I’ve been in the mood to bake. Yesterday, I made some M&M’s cookies, based on the Nestle Toll House recipe. It’s hardly gourmet, but they’re a good cookie. All I did was replace the chocolate chips with M&M’s candies. And then later, I made a mixed berry fruit crumble. This one was a stroke of brilliance, simply because I pulled the fruit ouf of a bag in my freezer. Mixed frozen berries work wonders for this. Then I put some butter, flour, brown sugar, and rolled oats in the food processor. I eyeballed the measurements, and it came out really great. The fruit crumble has been consumed all weekend. The cookies were put in the freezer.

Today, I wanted to bake a cookie that was slightly less pedestrian. When in doubt, turn to Ina Garten for a good recipe. I found a great shortbread cookie recipe on the Food Network‘s website.  Those have been mixed up and are chilling in the refrigerator. Half will be baked tonight. The other half of the dough will go into the freezer and get baked off later.
